Black Pepper
Why Black Pepper Quality is Important? Black Pepper is one of the most widely traded spices and is commonly used in food, seasoning, spice blends and food processing. Black pepper contains piperine, a naturally occurring compound responsible for its characteristic pungency and spicy flavour. The quality of black pepper depends on factors such as size, colour, density, aroma, moisture, purity and piperine content. High-quality black pepper should have uniform berries, strong natural aroma, good pungency and a clean appearance. Proper cleaning and grading help remove dust, stones, stems and other foreign particles. Black pepper is available in different forms, including whole black pepper, cleaned pepper, crushed pepper and black pepper powder. Piperine is one of the key compounds responsible for the characteristic pungency and flavour of black pepper.
