Fennel
Why Fennel Quality is Important? Fennel is an aromatic spice widely used in food, beverages, confectionery, spice blends and traditional preparations. Fennel seeds contain natural essential oils, with anethole being a major component responsible for their characteristic sweet aroma and flavour. The quality of fennel depends on factors such as seed size, colour, aroma, purity, moisture and essential oil content. High-quality fennel should have a fresh natural aroma, uniform colour, good seed size and clean appearance. Proper cleaning and grading help remove dust, stones, stems and other foreign particles. Fennel is available in different forms, including whole fennel seeds, cleaned fennel and fennel powder. Anethole is one of the key compounds responsible for the distinctive sweet aroma and flavour of fennel.
